Our tongue is procured raw and then carefully hand-cut by our chefs. Raw tongue retains more flavor than tongue that has been thawed from the freezer, allowing you to enjoy the original flavor of the meat. All of our dipping sauces are homemade. We use a unique blend of several types of soy sauce, three types of sugar, seasonings, and extracts from ginger and garlic in a pressure cooker to bring out the flavor of the meat.
